Feast Tofino 2015: Sneak preview

Feast Tofino is a collaboration between acclaimed local and regional guest chefs, restaurants, fishermen, foragers and farmers, all of whom celebrate in ‘boat-to-table’ food philosophy and great West Coast times.

Feast Tofino is less than a month away and Long Beach Lodge Resort chef Ian Riddick is just now putting the finishing touches on a special menu that will celebrate local, sustainable fisheries with locals and visitors alike.

Running May 8 - 24, 2015, Feast Tofino is a collaboration between leading local and regional guest chefs, restaurants, fishermen, foragers and farmers. During most of the month of May, Tofitians celebrate their ‘boat-to-table’ food philosophy and through a series of fun events and great West Coast times.

To get things started at Long Beach Lodge Resort, chef Ian has put together a special sneak preview for April 26.

Capturing the essence of the Pacific Rim rainforests and bountiful Pacific Ocean, chef Ian is pleased to offer Sitka spruce cured salmon served with citrus pearls, pickled cucumber, Karla’s pacific sprouts, spruce snow.

“This town has drawn together like-minded chefs who want to cook to the highest level possible,” says Ian, “I think we all realize that if we want to keep living in this incredibly beautiful place we need to draw people here not only for the scenery and west coast adventure, but also for the story of our food, local ingredients, talent pool of chefs, First Nations culture and our collective ability to consistently put our best plates forward.”
