Tips for Preparing the Perfect Salmon

Feast Tofino is an annual food festival that spans two weeks in May. This culinary celebration consists of signature events, specialty menus, guest chef appearances and collaborative promotions at various venues around town. This is a time for local chefs to show off the harvest bounty and the stretch of their imagination. Creative food and beverage is at the root, utilizing locally foraged ingredients in new and exploratory ways. Ultimately locals and visitors are presented with an immersive experience of coastal ‘boat-to-table’ culture.

Cured Salmon

  • 2 cups spruce tips
  • ½ cup Vancouver Island Sea Salt
  • ½ cup sugar
  • 4 oz gin (We recommend the Seaside Gin from Sheringham Distillery, adding citrus, floral notes to the dish)
  • 1 squeezed lemon
  • Zest of 1 lemon & lime
  • 50g crushed pink peppercorn
  • 1 side salmon
