Food Day Canada 2015 comes to Tofino

Clayoquot Sound Dungeness crab, local ling cod and spot prawns: the ingredients are magnificent and numerous in variety and peerless in quality. The goal for Long Beach Lodge Resort Chef Ian Riddick will be to present these wonderful ingredients of the Pacific Rim in an honest, unfettered manner, allowing them to speak to the region, climate and community.

The bounty beyond the surf line is complimented by the culinary sourcing on the floor of the coastal rainforest.

“I have never lived anywhere like this in my life, the variety and volume of edible mushrooms is incredible,” explains Ian, “I take guests foraging from August until November and we serve local mushrooms all year fresh and preserved.”

Ian is currently preparing his menu for Food Day Canada, an annual celebration which allows Canadians to join hands in one massive celebration in praise of Canadian farmers and fishers, chefs and researcher and home cooks.
